Chocolate Peanut Butter Pretzel Bars






The boys are in love with Reece's Peanut Butter Cups. This is a grown up version of them. There is a buttery pretzel base covered with a dark chocolate ganache and sprinkled with fleur de sel. This is for those who love sweet and salty. It's like how I like to eat french fries and ice cream together.

Banana Walnut Chocolate Chip Muffins with Streusel Topping



 The little chefs made breakfast this morning. They are becoming expert muffin makers.

Macadamia Toffee




I wanted to make candy this week but didn't know what kind. August suggested toffee. I pulled out a bag of macadamia nuts that my parents had sent me in the last care package from Hawaii. Toffee is harder than caramel but softer than brittle. These were rich and buttery, covered with chocolate and studded with chopped macadamias.

Ponnukokur and Kakosupa (Icelandic Pancakes and Cocoa Soup)







The little chefs and I were studying Iceland this month. We made ponnukokur which are Icelandic pancakes. They are like crepes. We filled them with jam or with cinnamon and sugar. Some we rolled up and others we folded. The boys are expert crepe makers. They can make them by themselves. I just need to supervise.
Kakosupa is like hot chocolate but it is thickened with cornstarch. Our Icelandic breakfast was yummy.

Oatmeal Cranberry Pecan Cookies




This was another of my late night baking projects where I just dug in the cupboard and found stuff to make cookies. The dried cranberries were added along with the classic raisins. The pecans added an extra nuttiness and large flake oatmeal made these cookies extra thick and chunky.

Bailey's Brownies





The creamy, boozy deliciousness of Bailey's Irish Cream meets the dark, decadent richness of chocolate. These are one of my favorite brownies to make. They are super moist and fudgy and quite easy to make.
