Polenta Corn Muffins



It's much more difficult to find stone ground cornmeal out here in New Zealand. I tried using polenta for these muffins. The result was a quite dense and heavy batter. Perhaps this muffin recipe was too healthy as it used applesauce instead of oil or butter and did not call for an egg but I added one anyway. They lacked sweetness which we made up for by adding honey or jam. Great served with chili though.

Rosemary Garlic Knots




Using leftover pretzel dough, I chopped up some rosemary and kneaded it in. After baking, these rolls were brushed with melted butter and minced garlic. So tasty right out of the oven. They would give Bravo's rolls a run for their money.

Lemon Zesty Muffins




These muffins are bursting with lemony flavor. Not only is there lemon zest and juice in the muffin but it is also poured over the top.

Tasty and not to sweet. These are perfect for afternoon tea.

Monkey Bars



A cross between a rice krispies treat and a granola bar drizzled with chocolate. The only drawback is it crumbles when you pick it up.

Gooey Chocolate Caramel Oreo Pie



Oh how I miss my kitchen gadgets. I had to go old school, using a rolling pin and a ziplock bag to bash Oreos into crumbs. In Canada they sold Oreo cookie crumbs already packaged in a box. Or if I had to I would toss them into the food processor.

 The large chunks of Oreo in the crust were tasty yet not very pleasing to look at. This pie was very sweet. Although I put it in the freezer for several hours, it was hard to slice as the chocolate layer was very gooey.
