Triple Chunk Chocolate Cookies



Israa and I wanted to bake the most chocolaty cookie. This cookie has milk, white and dark chocolate chunks. Mission accomplished!

Lime Cookies




I had a lime leftover from the margarita cupcakes. These lime cookies are like soft cakey pillows. One tablespoon of batter rapidly expanded to make huge cookies. I didn't want to make them too sweet so instead of slathering icing on the whole cookie, I just piped some zigzags. There's some lime zest and fresh lime juice in the icing. As well as lime juice and lemon oil in the batter.

Margarita Mini Cupcakes with Candied Lime




I've been meaning to try these cupcakes for a long time. I finally got around to it! These margarita cupcakes have tequila baked into them, brushed over them, and blended into the frosting. They also have some triple sec, lime zest and fresh lime juice in the frosting and a bit of coarse sea salt sprinkled over the top. A candied lime wedge sits on top.

Matcha and White Chocolate Pinwheel Cookies





I haven't made pinwheel cookies for a while. I had forgotten how hard they are to roll because the dough is so stiff it keeps on cracking. I tried my best. I even weighed the dough so I'd come out with the same amount of matcha dough as vanilla dough. The vanilla dough was easier to work with. The matcha powder caused the dough to become dry and stiff. I tried rolling them with the vanilla dough on the outside and with the vanilla dough inside. Outside was better. For all that work, I'm glad they were well received.

Lemon Chiffon Bundt and Mini Bundts




These light, lemon chiffon cakes were inspired by Sansa's lemon cakes from Game of Thrones. This month has been all about citrus. I used my bundt pan and mini bundt pans to make these and then sprinkled them with confectioner's sugar. They are airy, tangy and not too sweet.
