Peanut Butter Energy Balls



I was inspired by the energy bars my mom used to make when I was a kid. These are made from oats, crispy rice cereal, honey, peanut butter, cranberries, chocolate chips and chopped almonds.

This recipe comes from Curtis Stone's cookbook. It was so creamy, rich and delicious we wanted more. The sea salt sprinkled on top added a bit of extra sophistication.

Zesty Lemon Biscuits




Chocolate Zucchini Muffins




One way to coax my children into eating vegetables is to put them in muffin form. But botanically zucchini is considered a fruit while culinarily it is considered a vegetable. Anyhow, the kids love these muffins and their moist chocolatey flavor so much, they forget all about the zucchini within.

Crumpets












 It is only here in New Zealand that we started eating crumpets. They are really inexpensive at the grocery store.  I was inspired to make my own. These crumpets are so much more moist and flavourful though they lack the prominent holes of their store bought companions. They are sort of like a cross between an English muffin and a pancake.

Tartine Shortbread



A favourite cookie of mine. I used to think of shortbread as hard and flavourless but this one is soft and buttery and melts in your mouth.

Focaccia Bread






I baked some focaccia bread and topped it with fresh mozzarella, basil, and tomatoes. I finished it off with sea salt and pepper and a drizzle of balsamic vinegar.

This is by far my favourite brownie recipe. It combines the tanginess of cream cheese with the dark richness of bittersweet chocolate. This recipe was found on David Lebovitz's site.
