It is only here in New Zealand that we started eating crumpets. They are really inexpensive at the grocery store. I was inspired to make my own. These crumpets are so much more moist and flavourful though they lack the prominent holes of their store bought companions. They are sort of like a cross between an English muffin and a pancake.
